Skordalia

Skordalia (Greek σκορδαλιά skɔrðaʎa, garlic cream ' composition of σκόρδο and αλιάδα of Italian Agliata ) is a dip or appetizer of Greek cuisine.

It is a puree of white bread soaked and, expressed or cooked, mashed potatoes with garlic, olive oil and lemon juice. The mass can also chopped walnuts or almonds are added.

Skordalia is served with fried Bakaliaros or roasted vegetables and beetroot.
