Sodium erythorbate is the sodium salt of D - isoascorbic acid, an epimer of L -ascorbic acid.
Production and representation
Sodium erythorbate is produced from iso-ascorbic acid.
Use
Sodium isoascorbate is used as an alternative to ascorbic acid as a food additive ( E316 ) as an antioxidant and color stabilizer. It is approved only for heat-treated cream, dried or frozen fish with red skin, preserved fish products and pickled and otherwise preserved meat products.
