Sodium tartrate is a sodium salt of tartaric acid with the formula C4H4O6Na2. It comes in bound form in many fruits.

Representation and extraction

Sodium tartrate is generally prepared from natural tartaric acid, which in turn is obtained from tartaric wine residue, which is first mixed with milk of lime, and then with sulfuric acid.

Use

As in crystalline sodium tartrate, a defined amount of water of crystallization is bound, it is a common primary standard for Karl Fischer method, a common method for the quantitative determination of water by titration.

The mono - and di- sodium tartrate of ( natural ) L -( )-tartaric acid can be used as a leavening agent, as acid or acidity regulator and as a substitute for table salt. Due to the property of tartrates with iron and heavy metal ions to form stable complexes, they support the effect of antioxidants and are used as complexing agents. It's 335 approved with an allowable daily dose of 30 mg per kilogram of body weight in the EU as a food additive under the E number and regarded as such as safe.
