Spritzkuchen

Donuts, typical of the region referred to as spray rings, casserole donuts, fritters, soufflés, fat Squiggle, squiggle or lard Victoria, are donut- shaped pastries from Choux.

To prepare slightly sweetened choux pastry is formed into rings with a piping bag with a star-shaped spout on parchment paper and then baked floating in grease. After baking the pastry is drained sprinkled with powdered sugar or glazed on top with fondant.

The Berliner pastry and Lebküchler Gustav Louis Zietemann procured on 23 February 1832, the authorization to settle as a confectioner in Eberswalde. On April 1, 1832, he opened his pastry shop and offered there for the first time in Eberswalde donuts on. From 1842 he delivered his donuts at the station, where since August 1, the new railway line Berlin -Stettin wrong. Thus, the donuts were an advertising medium for the city and many travelers connected the name of Eberswalde with the donuts. Is commemorating Zietemann today a bronze statue in the Eberswalde station.

Probably, however, the recipe is older, takes place in a Szczecin cookbook from 1797 following instructions:

In southern Germany, Austria and South Tyrol donuts are sold in many bakeries under the name of " grapes ". Actually, however, grapes are another type of donut.
