Subtilisin is the name of a group of enzymes belonging to the other group of serine proteases and whose catalyzed reaction is thus the cleavage of protein chains. They are mainly found in bacteria of the genus Bacillus and are used industrially for decades in detergents to extract protein from inaccessible or inedible animal parts or make them brittle.

Occurrence

A wide variety of subtilisins and related enzymes have been isolated from bacteria of the genus Bacillus, especially the species B. subtilis ( subtilisin E), B. lentus, B. licheniformis ( subtilisin Carlsberg, ALCALASE ® ), B. amyloliquefaciens, as well as from the molds Tritirachium album, Thermoactinomyces vulgaris. All of these microorganisms occur naturally in the soil and the subtilisins serve them to degrade proteins outside the cell.

Use

Subtilisins be used as a stain remover in laundry detergents in the concentration of one to five milligrams per liter of wash liquor and were therefore produced several hundred tons per year industry. Newer artificial variants allow a reduction of the amount used in the same efficiency.

Subtilisins are authorized as feed additives ( for poultry).
