Sucrose is an emulsifier and food additive with the E number 444 sucrose acetate isobutyrate (SAIB ) is used since the 1950s in the food industry.

Properties

When sucrose is a so-called weighting agent; the density of a substance influence. He " complained " flavors, so they do not float as oily drops on the lemonade or cause milky cloudiness, but are uniformly distributed in the liquid. At the same time it stabilizes the flavor, color, and Trub, if this is desired.

Use

In Germany, in accordance with Appendix 4, Part B, § 5 section 1 and § 7 of the Regulation on the authorization of additives to food for technological purposes ( additive Licensing Regulation, ZZulV ) authorization for the use of SAIB only for non- alcoholic flavored cloudy drinks and flavored cloudy spirits with an alcohol content of less than 15%; the maximum allowed amount is 300 mg / l The same limit applies in Switzerland for table drinks, sodas, bottled water and table drinks with dairy products according to Annex 7 of the Regulation of the EDI (Swiss Federal Department of Home Affairs ) of the additives permitted in foodstuffs ( additive regulation, ZuV ).

Biological Significance

Toxicology

For up to 10% SAIB included food, was observed only very low acute and chronic toxicity in rats and monkeys. This is also true for dogs, but in this case showed changes in liver functions. These relate to the elimination of bromosulfophthalein (BSP) and indocyanine green (ICG) in the blood serum, which indicates an influence on the secretion of bile. Also, elevated levels of alkaline phosphatase were found in the serum. Further continued feeding led to changes in the fine structure of the canine liver, as revealed electron microscopy. The limit value at which no effect was observed in dogs, is 5 mg / kg and day. This was in the case of rats at 4 g / kg and day in monkeys 10 g / kg and day, and humans at 20 mg / kg and day. This shows that the effects in dogs of pharmacological in nature and based on the differences of individual physiology and do not have quantitative causes.

Teratogenicity

Teratology studies in rats and rabbits showed no teratogenicity over three generations at daily doses of 2 g / kg (rats) and 1.2 g / kg ( rabbit).

Analysis

SAIB can be determined using gas chromatography - mass spectrometric methods after previous solid phase extraction. The limit of detection in this case is 0.01%.
