Sumbala

Soumbala is a spice that is available in several countries in West Africa, particularly in Mali and Burkina Faso, distributed. It is produced from the seeds of the tree Néré ( Parkia biglobosa ) produced which are fermented for several days. Soumbala is traditionally sold in spheres and is stable for several months. A competition to Soumbala represent the bouillon cube industrially produced, but they are poorer in protein and trace elements. Therefore Soumbala is spread again today.
