Supplì

Supplì are filled with cheese, fried Rice croquettes from the cuisine of Lazio. They are usually served as an appetizer or as a snack.

For the preparation of fresh or leftover risotto with egg and some Fleischragù is first mixed, put on each a spoon risotto a small cube mozzarella, a second spoon about where risotto and shaped by hand into a ball. The balls are rolled in breadcrumbs and then deep fried. In the traditional Roman cuisine is the filling of the liver and sweetbreads.

It is common for the Supplì to eat with your fingers.

Commonly are also the names Supplì al telefono, Supplì al riso alla romana or Supplì. The addition al telefono alludes to the " telephone cord" from mozzarella, derived from breaking or biting.

A similar dish is southern Italian Arancini.
