Syrup

Syrup ( from Arabic شراب Sarab potion on the medieval Latin siropus, sirupus sweet Healing Potion ) a viscous concentrated solution is - by cooking and other techniques from sugary liquids such as sugar water, beet juice, fruit juices and plant extracts recovered. He is due to its high sugar content under airtight durable even without refrigeration. Syrup is used for beverages and desserts, too - especially the sugar syrup - as a spread and dough additive for sweetening and coloring cooking or baking (see: sauce, brown cake, brown bread ).

The production of fruit syrup to cook the fruit with some water and juiced like that. The screened liquid is mixed with sugar, boil again and then filled into hot rinsed bottles (see boiling ). In Germany, commercially prepared fruit syrups to mix with water or soda were popular until the 1970s, then came largely into disuse. The most famous brand was Tri Top. With the proliferation of soda also grew back the supply of syrup.

Commercially available raspberry or woodruff syrup (especially as an additive for Berliner Weisse known) is in most cases of concentrated sugar solution prepared flavorings and colorings - so it is not a fruit syrup.

Syrup -like substances occur naturally, such as maple syrup and honey.

In the food industry syrups play an important role as a cold-formed especially juice concentrates ( thick juice ). Here is the shelf life of less importance, but the reduced weight during transport. For example, orange juice is internationally traded almost exclusively as a syrup ( orange juice concentrate) and diluted with water to the original concentration just before bottling. Further, glucose syrup, an enzymatically or chemically derived from carbohydrate-rich plants such as corn, potatoes or wheat, concentrated sugar solution, often used as a substitute for the more expensive beet or cane sugar.

Various syrups like sugar syrup and grenadine are as lemonade raw material and used for mixing cocktails. The Lime Juice Cordial commonly used in cocktails it differs from lime syrup due to the lower sugar content.
