Tarator

The Tarator is a cold cucumber soup in the Balkan cuisine, be stirred at the mostly cucumbers, garlic, dill and olive oil and sometimes crushed walnuts in ice-cold yogurt. The consistency varies from soupy to fixed ( so-called dry Tarator ), the court may be gegegessen as cooling soup or as a dip for bread accordingly. Tarator is served especially on hot summer days as a starter.

The etymology of the word is unclear, but it is mostly derived from Turkish or Persian.
