Glyceroltriheptanoate or ( GTH ) is a triglyceride with three Enanthic residues. Since September 12, 2007 is the official EU raw material for labeling risk meat.

Use

As meat marker GTH was chosen because it is inexpensive, non-toxic and non- washable. As early as 2005 it was recommended by the Institute for Reference Materials and Measurements in Geel, Belgium as a suitable marker meat. GTH itself is colorless and odorless and is mixed for use with the actual dye. For the coloring of the meat is heated in an autoclave at 80 ° C and then added to the GTH. The minimum concentration of GTH is 250 mg per kg fat.

Biological Significance

A pyruvate carboxylase deficiency has been used in the treatment glyceroltriheptanoate, wherein the fatty acid moieties provide the basis of their odd carbon number of acetyl-CoA and propionyl- CoA Anaplerotic reactions. Further experiments on rats to investigate the treatment of epilepsy showed an effect on the central nervous system.
