Tulum cheese

Peyniri Tulum (Turkish: tulum peyniri ) is a Turkish fresh cheese made from raw or pasteurized goat's milk with 50 % fat in dry matter.

Production and appearance

The goat cheese is traditionally hung in goatskins for dripping. In today's industrial production, however, it matures in brine. He has a pure white to slightly yellowish color. The dough has a slightly crumbly, feta -like consistency without bark and a maturation period of 6 months.
