Waldorf salad

Waldorf salad is a salad of tart apples and raw celeriac, which cut into thin strips ( julienne ), mixed with chopped walnuts and dressed with a light mayonnaise. It can be flavored with a little lemon juice and / or cayenne pepper.

The Waldorf salad was created late 19th century in New York at the Waldorf, the precursor of the Waldorf- Astoria, though still without walnuts. Today, the version heard with walnuts to the classics of salad dishes. The Waldorf -Astoria, in turn, was founded by William Waldorf Astor and John Jacob Astor IV, descendants of Walldorf (Baden) originating German immigrant Johann Jacob Astor, which explains at the same time the name of the hotel and salad. Appeared in 1896, the recipe for Waldorf salad cookbook The Cook Book by Oscar of the Waldorf Oscar Tschirky, who was at that time Head Waiter at Waldorf. In this original recipe chopped celery is used instead of which have become customary in the Waldorf salad today celeriac.
