Welf pudding

Welfenspeise is a two-layered dessert, consisting of a white, boiled milk and vanilla cream is folded into the whipped egg whites very stiff foam. After cooling comes about a yellow layer of wine cream from whipped egg yolk, white wine and lemon juice.

The Welfenspeise was named after the colors of the Guelph dynasty ( white / yellow) and is considered a culinary specialty from Lower Saxony. It was invented by a Hanoverian chef and served for the first time for the 200th Jubilee of the ruling house of the Guelphs. It is said that it should have become the favorite dessert of Elector Ernst August.
