Zoigl

The Zoigl (also zeugl or Kommunbier ) is a bottom-fermented beer, which is widespread in the northern Oberpfalz and is brewed jointly by private individuals. The mash for the Zoigl is boiled and hopped in the so-called Kommunbrauhaus. The wort won the individual Zoiglbrauer take home with them, and put them in the fermenting room with yeast. Since there every Zoiglbrauer acts by his own recipe, variations in the taste of Zoigl from village to village, but also from host to host are typical.

The beer

Zoigl is a bottom-fermented beer that is brewed light or dark. It has the same leavening, the same wort and the same alcohol content as beer brewery, but a lower proportion of carbonic acid. Many of the beers are not filtered nor gespundet and thus Zwickelbier.

Dissemination

The Zoigl is brewed mainly in the northern Upper Palatinate in local Kommunbrauhaus of individuals. The brewing right often for generations is on properties and property and is recorded in the land register. It could thus originally only the owners of these houses brew. From the church a " boiler money " is often collected are paid to the light, water, insurance and wear and tear. Tradition
