Zymase

Zymase is an enzyme which is derived from yeast. It catalyzes the alcoholic fermentation of hexoses. Zymase is the collective name for the enzymes necessary for fermentation in yeast. The latter led to the discovery of Eduard Buchner cell-free fermentation, when he examined cell-free yeast extracts in 1897 for use in medicine. For this discovery got Buchner 1907 Nobel Prize in Chemistry.
