Filmjölk with bacteria acidified milk of different fat contents. Be used bacteria of the genera Streptococcus, Lactococcus and Leuconostoc. The metabolism of the bacteria gives the milk a sour taste and makes the milk proteins, especially casein, to coagulate. This dairy product this slightly viscous. In the so-called långfil, one occurring particularly in northern Scandinavia type of Filmjölk, sets the bacterium Lactococcus lactis ssp. cremoris the lactose part into polysaccharides, leading to a more creamy consistency.

It is often said that to produce a certain type of Filmjölk ( Långfil ) was previously rubbed a vessel from the inside with grease herb. However, this is probably due to a confusion with the production of the långmjölk referred to in tettemelk Norway, Sweden product, where the enzymes of carnivorous fat herb are used to coagulate milk.
