Pease pudding

Mushy peas, Erbsbrei or Erbsmus is a puree of cooked dry yellow peas ( split peas ), which is served as an accompaniment to most savory dishes. It is especially known in the Berlin cuisine, but also in the Hunsrück in Austria and England.

To prepare the peas are first soaked for several hours in unsalted water (if they are not peeled), then cooked in the soaking water, passed through a sieve and only salted the end. It can be flavored with a little butter.

Berlin split pea soup is flavored with marjoram, potatoes may additionally contain and is traditionally served with fried onions and bacon ausgebratenem boiled knuckle of pork with sauerkraut. It is also customary to add the peas some of the cooking broth of the Eisbeins.

In Hunsrück split pea soup is just salted, a supplement with fried onions and bacon is possible. It is a traditional part of the Hunsrück fair and feast Kappes un Erwes ( " cabbage and peas " ) - sauerkraut and mashed peas with smoked pork, formerly with any pork or beef.

Austrian pea puree is bound before passing with roux. It is served with fried onions.

For English pea puree the cooking water onions, cloves, bay leaves and herbs are added and it is completed after passing with butter and beaten egg.

As instant pea puree product is available especially in East Germany, mostly with a share of potatoes. It is as prepared instant mashed potatoes.
