Za'atar

Zatar (Arabic زعتر, DMG za ʿ tar, thyme ', also Za'tar, Zahtar or Satar ) refers to a mixture of spices from North Africa, the Middle East and Turkey. Traditionally, it is mixed with olive oil and painted before baking on a flat bread. We used the mixture but also for meat and as a dip. The spice mix is also known as " hyssop " or " Biblical hyssop ."

Composition

The basic recipe consists of sumac, roasted sesame seeds, Zahtar herb and salt. The eponymous herb consists of the dried leaves of the plants Majorana syriaca, Syrian hyssop (Origanum syriacum ) and / or capitate thyme ( Thymbra capitata ) and remembers the taste of oregano.
