Amaranth is a red, well water-soluble azo dye which is used as a food coloring. In Europe it is approved as a food additive E 123.
Amaranth is resistant to light, heat and the preservative is benzoic acid. In the presence of fruit acids Amaranth loses its color. Amaranth is used for aperitif wines, spirits and fries.
In the United States and the former Soviet Union Amaranth is not approved as a food additive. It is believed that amaranth pseudo allergies, skin reactions and asthma can cause. He is not carcinogenic.
