The climate is that of Burgundy - a transitional climate, predominate in the continental on maritime influences. The mostly dry and hot summer, let the Pinot Noir to ripen though, great vintages emerge only when there is no rain in the fall affects the reading. Due to the pure east facing the micro-climate is relatively cool, but simultaneously protected Spatfrösten.

The vineyard rests on a base rock from the Bathonian. The bottom layer overlying the north is thick, clay- calcareous reddish color. In the south the soil is less deep and stony. He is marked there more of white marl, and lime is higher.

Wine

The Bonnes Mares is generally produced exclusively from Pinot Noir. As another Pinot and Pinot Liébault Beurot are allowed. Theoretically, up to 15 % white grapes ( Chardonnay, Pinot Gris and Pinot Blanc) are used. The natural alcohol content must be at least 11.5 vol - % amount, Chaptalisation is - as everywhere in Burgundy - allowed. The base yield is 35 hectoliters per hectare, this value may be exceeded by a maximum of 20%. From 2000 to 2004 495 hectoliters were produced on average, or about 66,000 bottles. Thus, the yield was 33 hl / ha.

The wines Bonnes - Mares able are powerful and full-bodied with a strong tannin structure. In his youth, the Bonnes Mares is according to strict and locked, he needs a longer maturation cellar to develop its aromatic potential. The nose is then of great complexity, dominated by notes of cherries, violets, spices and forest floor.

Origin of the name

The origin of the name " Bonnes Mares " is not clear. Jean -François Bazin points out in his book (see below) on two explanations: The old verb " Marer " described the editing of the vineyard. " Bonnes Mares " would thus be carefully edited or easily editable vineyards. The other explanation is derived from the name of " bonnes mères " ( good mothers or women) - an allusion to the Bernardine (→ Cistercian ) Abbey Tart, which belonged to the French Revolution the neighboring Clos de Tart.
