Occurrence
Calcium tartrate occurs naturally as an ingredient of many fruits and is one of the main ingredients of tartar.
Production and representation
Calcium tartrate can be obtained by the reaction of potassium hydrogen tartrate with calcium oxide.
It is likewise possible reaction of potassium tartrate with calcium chloride or calcium hydroxide.
Properties
Calcium tartrate is a colorless, odorless solid that is practically insoluble in water. Tetrahydrate has an orthorhombic crystal structure.
Use
Calcium tartrate is used in the food industry as a leavening agent, complexing agent, citric acid and regulator. It is in the EU as a food additive under the E number 354 with no maximum limit ( quantum satis ) generally approved for all food.
