Caponata

Caponata is a sweet and sour vegetable dish of Sicilian cuisine.

The ingredients and the preparation of Caponata vary by region. Main ingredients are eggplant and tomatoes, peppers and usually also celery or fennel. The vegetables are diced, salted and together with olives, onions, garlic, almonds or pine nuts fried in olive oil.
