Chapulines

Chapulines ( American Spanish, from Nahuatl Chapolin borrowed ) are grasshoppers of the genera Sphenarium, Schistocerca, Taeniopoda, Trimerotropis, Spharagemon, Plectotetra and Melanoplus.

They are used in Mexico, especially in the state of Oaxaca as food; roasted they are offered there from spring to autumn as a snack in the markets.

To prepare grasshoppers are usually only blanched, then fried or roasted in a Comal mentioned, shallow pan and seasoned with salt and lime or lemon juice, sometimes with chili, garlic. The legs and sensor can be removed prior to preparation or before consumption.
