Chlorophyllin is a semi-synthetic, water-soluble derivative of chlorophyll.

Use

Chlorophyllin ( E 140 ) and their copper-containing complexes ( E 141 ) are used as a food additive in foods generally, with few exceptions for coloring foods highly quantitative unlimited use.

Biological Significance

Chlorophyllin is topical use for slow -healing wounds without serious side effects. Together with chlorophylls can Chlorophyllins form molecular complexes with carcinogens ( heterocyclic amines from cooked meat or aflatoxin B1) and thus block carcinogenic effects. Dietary supplementation with chlorophyllin before the meal could reduce a biomarker in the urine of aflatoxin -induced DNA damage in a Chinese population with a high risk of liver cancer by unavoidable Aflatoxinexposition from moldy cereals and legumes substantially. Whether similar mechanisms also inhibit the absorption of nutrients, has not yet been investigated.
