Cream cheese
As Doppelrahmkäse (also Doppelrahmstufe ) refers to cheeses with a fat content in the dry matter 60-87 percent.
Cheese Doppelrahmstufe thus have a very unobtrusive taste. They are odorless and soft and taste, if they were not changed by spices, sweet and mild, and sometimes a little bit sour. Your maturity time is generally very short.
In the U.S., the Doppelrahmkäse, english cream cheese, a common cream cheese. Cream cheese is diverse uses, for example as a spread, particularly known bagel with cream cheese, or the manufacture of cheese cake, english cheesecake.
Known double cream (fresh) cheese are:
- Boursin, a spiced with garlic and herbs French Doppelrahmkäse
- Petit- suisse, a cow's milk enriched with cream cheese
- Philadelphia ( cream cheese ), an American Cream cheese, which is available worldwide.
Cheese with an even higher fat content in the dry matter are referred to as Dreifachrahmkäse.
