Curculin

Curculin is a sweet tasting protein found in the fruits of monocots plant Curculigo latifolia Malay ( Malay Lumbah ) from the family of Hypoxidaceae. The primary structure consists of 114 amino acids.

Its sweetening power with respect to sucrose is 550- fold in 6.8% strength solution. The brought about by curculin sweet taste lasts only a few minutes. Also, it has to transform the property sour taste into a sweet taste and is thus a taste modifiers (English key modifier ).
