Dodecyl gallate

Gallates are synthetic derivatives of gallic acid. The most important, as allowed under the additive authorization regulation, gallates are:

  • Propyl gallate (E 310)
  • Octyl gallate (E 311)
  • Dodecyl gallate (E 312)

The ADI is what limits the application of 200 mg / kg fat for certain foods at 0.5 mg.

Gallate are mainly used as an antioxidant in the fatty phase in foodstuffs and pharmaceuticals. Main areas of application are fat baked goods and their ingredients such as margarine, persipan, marzipan and poppy seed fillings. They are also included in confectionery such as nougat, marzipan and gum. Another major application is the production of dried soups, condiments and potato products such as french fries and potato chips.
