Doogh

Dugh (also: Dough, Persian دوغ ) is a yogurt drink from the Persian cuisine, which is distributed under this name in Iran and Afghanistan. It is the Turkish Ayran and Indian Lassi similar.

Dugh consists of a mixture of yogurt with whey and water or ( carbonated ) mineral water and is lightly salted. The trunk can be refined in many ways, for example by the addition of finely chopped herbs such as mint, dill, parsley and tarragon. Also, there are versions with chopped cucumber. Spices such as nutmeg, cardamom and pepper are also important sources in the recipe. The consistency varies from thick - (1 part water to 4 parts yogurt) until runny (equal parts ). As a drink, to eat the thin liquid version is preferred. All ingredients must be cold. For special refreshing ice water is added to the finished beverage or ice cubes are added.

History

According to current archaeological findings of Dugh was already known to the Aryans and the Achaemenids. This makes it one of the oldest known beverages.

There are also sweet Dugh, which is seldom drunk. The renowned Persian - German Dictionary of Bozorg Alavi translated the Persian word Dugh falsely with buttermilk into German.
