Fleurines

As Fleur Ines is defined as the natural crisscrossed with many columns, rock caves, which are used in the production of cheeses. Characteristic of Fleurines are chimney -like gaps and cracks that form a sophisticated ventilation system. Microscopic cheese particles have there fixed on the cave walls, which give off a breeding ground for the noble molds and yeasts. The circulating through the Fleurines wind carries the mold spores with them.

Play a special role in the maturation of Fleurines Roquefort and Bleu des Causses.
