Grape seed oil
Grapeseed oil is an oil that is extracted from the seeds of grapes. It can be produced like all vegetable oil in two ways:
- Hot-pressed (or chemically extracted, see refining )
- Cold pressed
Regardless of the method of manufacture grape seed oil is very high heatable ( smoke point above 190 ° C) and can therefore also be used for frying. The triglyceride has a high proportion of acyl groups which are derived from unsaturated fatty acids, for example, in the following composition:
The oil contains lecithin and natural antioxidant procyanidin.
Hot -pressed oil is priced in the range of about pumpkin seed oil ( the end of 2004 about 12 to 16 euro per liter). Cold -pressed oil made about the four - to five times the price.
One liter of oil can be obtained from 40 kg cores, which corresponds approximately to the core content of two tons of grapes.
Hot -pressed grape seed oil
This is a neutral in taste and color cooking oil. However, it contains lower amounts of natural fat-soluble substances on the basis of the chemical extraction.
In the early 1980s, this oil came into the headlines because frequently occurring samples containing high concentrations of polycyclic aromatic hydrocarbons. These came probably from flue gases that emerged during drying of the seeds.
Cold pressed grape seed oil
Cold pressed oil contains the fatty acids in composition as described above even antioxidants (vitamin E, resveratrol, procyanidins ) and lecithin. It has a light green iridescent color and the taste is slightly nutty, with the bunch of grapes can still be herausgeschmeckt. Therefore, it is mainly for cold use, such as spice for salads and sauces, cheese or for pickling meat is well suited.
In addition, grape seed oil is used as a base for cosmetic preparations ( Vitis Vinifera Seed Oil INCI ).
Use as a cosmetic is said to have been known from the Middle Ages. In modern times, oil is recovered in this way for a few years, starting in the U.S. and in France. There are now also in Germany oil mills that offer this product.
