Ibores cheese

Ibores or Queso Ibores is a Spanish goat cheese. He comes from the Autonomous Region of Extremadura and is named after its region of origin, the Comarca de los Villuercas - Ibores named. Its production is protected by the Designation of Origin (DO) " Queso Ibores ".

For cheese making goat breeds Serrana, Verata and Retinta be used. The approximately 27,000 goats grazing in the mountains of Guadalupe, Villuercas and Altamira, and in the wood pastures of the region.

The Ibores cheese has a mild tangy flavor. A whole cheese weighs typically 650-1200 g
