Kriek lambic

Kriek ( Flemish for sour cherry ) is a traditionally manufactured in Belgium Fruchtlambic with an alcohol content of about 4 % to 6 % and is one of the Belgian beer specialties.

Production

About 200 grams are macerated fresh cherries in Lambic and left for three to 18 months for the purpose of second fermentation in the barrel by fructose per liter of beer. Still prefer the old brewer of cherry from Schaerbeek, near Brussels. The already small cherries increasingly rare, sharp tasting varieties are usually harvested only when they are already slightly shrunk and were thus already concentrated. This makes for a more intense flavor. The Kirschlambic has a red color and intense aroma fruity.

Consumption

Kriek is drunk at a temperature of 5-6 ° C from balloon glasses. Its fruitiness and acidity have made it a popular summer drink; in winter it is also offered hot and spiced Christmas markets. Kriek is also used as an ingredient in the Flemish cuisine.

Other fruit beers

More Fruchtlambics be traditional, recently refined with muscatel grapes and raspberries with Sauvignon. Prior to bottling, something young Lambic is still mixed, to put a further fermentation in the bottle in transition and to achieve a fine mousse. Because of the addition of fruit the beer does not correspond to the German purity law.
