Lactalbumin is a protein, the lactose synthase enzyme complex together with lactose synthase A, which catalyzes the last step in the biosynthesis of milk sugar. Lactalbumin is found in the milk of mammals, after it was produced in the mammary glands. It is closely related with the enzyme lysozyme C.

The albumin of the domestic cow (Bos taurus) is a human allergen. It is denatured during cooking; This change, however, is reversible to 90 percent and is reversed upon cooling. Cow -lactalbumin is an ingredient of the whey protein of cow's milk. It represents about 4 percent of the total cow's milk protein.
