Lübeck Marzipan

Marzipan is a protected by the EU Geographical Indication (PGI) for marzipan from the northern German city of Lübeck. That comply with the marzipan by brand commitment certain quality principles (at least 70 % marzipan, more than 30% sugar), is not relevant for the protection of the term.

In the guild roles Lübeck was " Martzapaen " was first mentioned in 1530. Lübeck's reputation as the " city of Marzipan ," his eminence in the marzipan production, however, was not established until after 1800.

1786 founded the confectioner Johann Gerhard Maret its operation. He died in 1804, leaving behind a young son, so that his long-time companion Johann Georg Egger low initially continued the pastry. 1822 finally took Peter August Maret operation and low Egger founded his own company. In the following decades, about a dozen marzipan factories ( Erasmi & Carstens, Lubeca, marzipan country, Mest and v. a ) were founded in Lübeck, which laid the foundation for today's global spread of candy.
