Maraschino

Maraschino (read: Maraschino ) is a clear, relatively dry fruit liqueur, which is made ​​of Marasca cherries, which were crushed with their nuclei and therefore give a very fine almond extract. Real Maraschino is stored for at least three years and has an alcohol content of 32%. Maraschino liqueur is different from most other fruit liqueurs, since there is no fruit extract or fruit juice is used.

History

The first distillery for the maraschino liqueur was from the merchant Girolamo Luxardo in the former Dalmatian port city of Zara (now Zadar, Croatia) founded in 1821. Eight years after the founding Luxardo received the privilege for sole manufacture of the liqueur. After the Second World War, when Yugoslavia Zadar was attached to the family Luxardo founded in Torreglia near Padua, a new distillery. Today it sells her liquor under the name Luxardo Maraschino, while the Croatian distillery in Zadar advertises their original maraschino from Zadar to the original and unbroken tradition.

Use in the kitchen

Maraschino is often used in the preparation of desserts, ice or to taste refinement of fruit salad.

Maraschino liqueur should not be confused with the juice of maraschino cherries or other cherry liqueurs, all of which are much sweeter.
