Milt

As fish milk or milk products, including milk or short Melcher called the semen of male fish, molluscs or other aquatic species is called. This fluid is excreted during the spawning season on the roe, which fertilization takes place.

Fish milk is fresh or preserved with salt used as food. It is used for flavoring sauces or concomitantly used in dishes from all over the fish. Traded is mainly the milk of carp and herring ( herring milt ), rarely also of mackerel or cod.

Fish milk is rich in amino acids, particularly arginine and histidine. Japanese cuisine has milt (Japanese白子, Shirako ) among others by Tara ( cod, Pacific cod in the narrower sense ), fugu and tai (sea bream, Pagrus major, in the strict sense ). Here it is served fried.
