Pentadin

Pentadin is a sweet protein, which was isolated in 1989 from the fruits of the Central African liana plant Penta brazzeana.

It should have a sweetening power of about 500. The taste sensation is similar to that of monellin and a little less of the thaumatin. The molecular weight of Pentadin is estimated to 12 kDa.
