Preserving sugar

Crystallized or Einmachraffinade is a type of sugar with very large uniform sugar crystals that are particularly well-suited for preserving of fruits for jams and jellies. The large crystals dissolve more slowly than conventional table sugar. This results in cooking the fruit less foam and by the slower melting of the sugar crystals will reduce the risk that the sugar at the bottom of the pot from burning or forming lumps caramel. Unlike Gelierzucker contains Crystallized no additives.
