Pyrazine (1,4- diazine ) is an organic compound selected from the family of the heteroaromatic, or more precisely, the azines Azabenzole. It is a colorless, flammable solid.

Furthermore, pyrazines is the generic term for a group of chemical compounds. These are flavorings, which are derived from pyrazine. You are responsible for example for the characteristic odor of many vegetable or formed on heating of food ( roasted flavors ). There are numerous different pyrazines. Alone from the group of compounds known alkylpyrazines are so far 70. Pyrazines are often responsible for a storey, roasted smell of food and probably arise through a Maillard reaction during heating.

Alkylpyrazines

Alkyl pyrazines is the backbone of pyrazine basis, which may have different substitution patterns. Among the alkylpyrazines include naturally occurring potent flavorings, which have a partly very low odor threshold. This alkylpyrazines such as: 2 -ethyl-3 ,5- dimethylpyrazine and 2,3- diethyl- 5-methylpyrazine have an earthy odor.
