Ragi mudde

Ragi ball ( Kannada: ರಾಗಿ ಮುದ್ದೆ Ragi Mudde; Telugu: Sangati ) is an Indian main dish of finger millet ( Kannada: ರಾಗಿ, ragi ). It is a specialty of the state of Karnataka, but also partly to be found in Andhra Pradesh.

Description

Ragi ball is a tennis ball big lump of crabgrass flour. Serve with curry or sambar is served. A special feature is the Essweise Ragi Ball: It is separated by hand a piece, dipped in curry or sambar and swallowed without chewing.

Production

Water is boiled and stirred finger millet flour. 1 kg of crabgrass flour 2 liters of water are needed. The slurry is then cooked at low heat for 10 minutes. Then allowed to cool until it can be shaped by hand. To prepare rice - ragi ball, is cooked rice in the water. After 10 minutes of cooking time are added, the finger millet flour and proceeds as described on. For the rice variant come to 1 kg flour 3 liters of water and 0.5 kg of rice.
