Raspberry Ketone ( Rheosmin, according to IUPAC 4 - (4 -hydroxyphenyl ) -butan- 2-one) is a naturally occurring phenol in raspberry, which accounts for most odor impression of berry (called a "character -impact compound ").

Occurrence

Raspberry Ketone is the main odor component in raspberries (Rubus idaeus ). The natural raspberry flavor however, is caused by about 250 other substances (usually alcohols such as linalool and geraniol, ionone as ketones, aldehydes or lactones ).

Rheosmin located in raspberries, large-fruited cranberries (Vaccinium macrocarpon ), blackberries (Rubus ) and Logan berries ( Rubus loganobaccus ) next to it also as a glucoside Lindleyin or Isolindleyin. The ketone is also present in tobacco smoke, and it was not found in the tobacco itself.

Application

Raspberry Ketone is used for flavoring of foods, such as sweets, are used. A further possible application is the use as an insect attractant.

Upon administration of high doses in the range of up to 2 % of the total food intake, a positive effect on fat metabolism in mice has been demonstrated, the effect of increased norepinephrine - induced lipolysis.
