Rumbledethumps

Rumbledethumps is a traditional dish from the Scottish Borders in the UK. The main ingredients are potatoes, cabbage and onions. Just as the Irish Colcannon or the English Bubble and Squeak it is eaten either as a side dish or main course.

Preparation

Onions and cabbage are crushed and briefly sauteed in butter until the onions are translucent and the cabbage is soft. Then mashed potatoes with butter, salt and pepper are added and stirred everything well together. This mixture is then filled into an ovenproof dish, possibly sprinkled with cheddar or similar cheese and baked until the surface is golden browned.

Variants

A similar dish from Aberdeenshire Kailkenny ie, in the butter cream is used for the Kartoffelmix instead.

In January 2009, Gordon Brown contributed a Rumbledethumps Recipe for a cookbook of Donaldson 's School for the Deaf ( a school for the deaf ) at, where he testified that this was his favorite dish.
