Tursu

Torshi, from Persian ترشی Torshi of Torsh sour to German, also Turshu, Turshiya, Turschija, or Turşu (Cyrillic туршия, Greek τουρσί ) called, is a document emanating from Persia pickled in vinegar Salt Lake vegetables; often with garlic, which is now widespread in south-eastern Europe, Asia Minor, the Caucasus and the Middle East.

Typical ingredients include cabbage, cauliflower, green beans, carrots, eggplant, peppers, hot peppers, green tomatoes, cucumbers and squash. It is a traditional appetizer or meze. Originally it was consumed in winter as a substitute for fresh vegetables, but is now offered throughout the year.

In Turkey Hamsiturşu (of hamsi, an anchovy ) prepared in the same way that is comparable with fried herring.
