Vanillin-Synthase

The Vanillinsynthase (VS, EC 4.1.2.41 ) catalyzes the cleavage of the 3-hydroxy -3-( 4-hydroxy -3-methoxyphenyl ) propionyl -CoA and acetyl -CoA to vanillin.

Thus, the enzyme is one of the lyases. It has been identified in some strains of Pseudomonas and Streptomyces viridosporus.

The reaction catalyzed by the VS reaction is an intermediate step in the degradation of ferulic acid to vanillin. Vanillin is then converted by further enzymatic reaction to protocatechuic acid. This path is for lignin degradation is important. While white-rot fungi depolymerize lignin, bacterial microorganisms can convert the resulting aromatic degradation products.
