Vinaigrette

Vinaigrette (French vinaigre " vinegar " ), is a cold sauce made from vinegar, oil, and other ingredients such as herbs, depending on the recipe. It is served on salad, cooked vegetables, meat and steamed fish. It is often referred to by the English term for vinaigrette as French dressing. Under French dressing but we also understand a salad dressing, mayonnaise, cream, ketchup or other ingredients contains that do not belong to a vinaigrette.

To prepare salt is first (also available in lemon or lime juice ), dissolved in wine vinegar, then added about three times the amount of oil, and all devious to an emulsion. Usual supplements are in addition to pepper, herbs such as parsley, chives, chervil, tarragon or dill and capers, finely chopped onions or shallots and garlic and a little sugar. By adding mustard or hard-boiled egg yolk emulsion can be stabilized.

In Russian cuisine is meant vinaigrette ( винегрет ) no sauce, but a salad of cooked vegetables (such as potatoes, carrots, beetroot ), pickles and sauerkraut with oil and salt. He belongs to the traditional festive dishes.
