Vincotto
Vincotto ® (from Latin vino cotto - cooked wine ) is the registered brand name for an Italian Würzspezialität of thickened grape must.
Production
To prepare the Vincotto ® Negroamaro and Malvasia grapes of the varieties are nera ( Malvasia Nera di Basilicata, Malvasia Nera di Brindisi and Malvasia Nera di Lecce ), which still dry on the vine under the action of the sun. These grapes are a must is then recovered, which is cooked to a fifth of its volume for 20 hours to a kind of syrup produced. This syrup is then mixed with a little vinegar and filled into oak casks and storage for four years subjected. After maturation of the Vincotto ® is either uncut bottled or flavored with fruit or fruit essences (eg oranges, lemons, raspberries, figs, carob ).
Use
Vincotto ® is used as a stand-alone Würzspezialität. Its special aroma is comprised of the heavy syrup sweetness along with a fine vinegar note. Due to this composition Vincotto ® is suitable both for flavoring sweets and fruits, as well as spice for salads, vegetables, meat and poultry dishes, cheese and risotto.
