As a de-stemming, Destemming or de-stemming is defined as the detachment and removal of the berries from centimes or grapes framework of grapes. This is to prevent the tannins contained in grape stalk and Sable get into wine. The verb stemming refers to the grape, De-stemming and de-stemming come from the grapevine.

Previously, the destemmed by hand; now called stemmers, Rebel Machine or stemmer can be used. With a spiked roller, the grapes are conveyed through a perforated or mesh drum. The berries fall through and the combs ( centimes) are ejected at the end of the drum. The perforated drum can be mounted horizontally or vertically. The crushing of the berries are sold with underlying Nippers. The pressure of the rollers must be adjusted so that it does not come to squeezing the Rebkerne. The squashed berries give the mash, which is pressed in a press. If a whole- Beer pressure is provided, the rollers can be avoided in the Destemmer with baffles.

Modern Grape harvesting harvest only the berries, so that a separate de-stemming is superfluous.
