Daftmill distillery

Dafmill is a whiskey distillery in Cupar, Fife, Scotland. The distillery was founded by brothers Francis & Ian Cuthbert, operate the distillery as a sideline on the basis of their farm in 2005.

Name

Dafmill translates crazy mill. The flowing past the farm Bach gives the impression as if the flow would go up the mountain and was therefore given the name by the locals " Daft Burn" ( crazy creek ). When the mill was built on the site of the farm she got her name from the brook: " Daft Mill "

History

The founding family for 6 generations lives on the premises of the farm, but the family came in 1984 in the possession of the land. The distillery was founded in 2005 as one of the newest but also at the same time the smallest distilleries in Scotland. Today it is one of the few settled in the Lowlands distilleries. Except Dafmill there is the founding date only 3 other producing distilleries in the Lowlands: Auchentoshan, Bladnoch and Glenkinchie. The first whiskey was fired on December 18, 2005. The buildings of the farm distillery are over 200 years old and originally housed among other things, an oat mill, but has long been out of service - the millstones were removed already in the 40s of the 20th century, the mill was even before that longer no longer active.

Production

The distillery building is located in an old stone farm building which formerly housed a mill also. Except for the made ​​in Rothes Distilleries ( stills ) and the mash tun ( mash -tun ) have been produced all other parts of the distillery by artisans from the region, which are located in a radius of less than 10 km around the former farm buildings.

The water for whiskey production comes from a private source on the grounds of the farm. In the mashing process 1 ton of mash is processed in the Mash Tun, with 4,000 l water first and second 2000 l Water. Fermentation takes an unusually long for Scottish distilleries and is 96-104 hours. The wash back holds approximately 5,000 liters and thus results in 2 fills for the wash still.

The wash still has a volume of 2,500 liters, the Spirit Still of 1,500 l

For the bearings Various pre barrels are used. In addition to sherry and bourbon casks parts of production from 2008 are embedded in rum casks.

The whiskey is expected from the age of 10 years go according to a statement the company operating the filling and in the sale, that is, it is not expected to bottling before the year 2016.

Visits

As a farm distillery Dafmill has no visitor center and can not be visited regularly. However, you can visit appointments.
