For Marmite emissions from the brewing of alcoholic fermentation in yeast cultures are used. These are made with bottom-fermented beer as so-called drusen or tank bottoms from, top-fermented beer in the other hand, increase the yeasts as Geest to the surface. The set of the still living or already dead yeast cells is collected and digested by autolysis. This cell sap is released, which is rich in protein. These are further broken down by enzymatic action into their amino acids, which have a significant share of the typical taste of the wort and partly real effect of the glutamic acid as a flavor enhancer, for example. The initial liquid extract is concentrated in the further course, several times filtered and freed of bitter substances - in principle by a process that was previously discovered already by Justus von Liebig.
